Summer Vegetable Curry

Oh yes, I'm still around. The doldrums of Summer and work make it hard to "get inspired" by much more than the daily grind, but I feel that summer is peaking and the next few months are going to be exciting and fun.

Couple of foodie items here...my favorite taco cart (La Guera) abruptly moved from their normal spot and I've been missing a good potato/egg/cheese bfast taco ever since. So yesterday, after a triumphant return to the Farmer's Market (which was bustling and bursting with greats stuff) I went to one of my favorite vendor, Blanco Valley Farms, and picked up a dozen whole wheat tortillas. Once home, I pulled some frozen hashbrowns (our Sunday morning staple), sauteed them in a bit of oil, then scrambled the eggs and wilted in Spinach and Cheddar. Voila! Of course, nothing would be anything for me if condiments weren't added and a bit of Chipotle Garlic salsa did the trick.

I was massively productive yesterday with a great menu for the week, birdie bread for Isaac, and an awesome dish that is officially on the rotation: Summer Vegetable Curry. I've made Curry before, but this wins for being extremely healthy, easy to make, solid for vegetarians (still are) and included two veggies Ryan typically doesn't like but he loved them! That is a winner.

The Naan comes from a new vendor at the Farmer's market as well and was delish. The recipe is from Clean Eating, a magazine my sis Jen bought me for Christmas. It is literally my favorite magazine - we are on the same page with how we think about food, the industry of food, and some smart looks at nutrition.

Onions, Eggplant, Zucchini, Swiss Chard, Carrots, French Green Lentils, Fresh Tomatoes, Garlic, and Spices. Fantastic!!

Moving on, at the homestead we're two months into our new kitten, Tilda - she is adorable, beautiful, strong, and...well, a kitten, so I have nicks and scratches all over my body. It's worth it, though, she is a super cute an lovey kitten. Grete will maybe forgive me some day; at least someone keeps her on her toes and out from under the bed! They do seem to like each other.
