Christmas Eve Turkey

We enjoyed a quiet Christmas Eve and Christmas here on the compound, cooking a gorgeous Turkey and enjoying some delicious Vino. Our acclaimed new oven continues to amaze me with its smart cooking settings. The best: a roast probe. All we did to stuff this bird was put in some carrots, celery, etc. inside for some flavor, then cover it with butter, salt, and pepper. Into a baking bag and onto a roasting pan. Then, insert the roast probe and set the desired temperature on the oven. 2 hours later...voila!

The only mishap was not letting it thaw out completely - so one of the photos is my hand trying to remove the frozen neck. It wouldn't budge and I felt like I was further desecrating our poor Turkey...so the neck cooked in place.

Green Bean Casserole (with fresh green beans - dang!)
Mashed Red Potatoes
Mushroom Turkey Gravy (thank you mom for teaching me how to make proper gravy sans packet)

A lovely meal.
